Of course, if you wanted to make a meat lasagna just substitute meat sauce for the marinara. http Vegetarian Lasagna * 8 ounces lasagna noodles * 28 ounce jar spaghetti sauce (or make the recipe for marinara sauce, below) * 1⅓ cup water * 12 ounces ricotta cheese or cottage cheese * ½ cup grated mozzarella * ½ cup grated parmesan * 1 egg * 1 tablespoon, each: fresh oregano and basil, each; or 1 teaspoon dried, each * ½ teaspoon black pepper * 1½ cups diced summer squash (or you could substitute a 10 ounce box of frozen spinach, thawed and drained) Combine sauce and water in a large pitcher or bowl. One tray is a meal for many. Serve with salad, garlic bread and a glass of wine! Enjoy the video recipe at Ingredients: Sauce: 2 chopped shallots 4 chopped cloves garlic 26 oz. marinara sauce 14 oz. diced tomatoes 1/2 teaspoon salt 1/2 teaspoon red pepper Fresh thyme Fresh basil Fresh parsley Filling: 9 lasagna noodles (make 1 or 2 more in case they are damaged) 2 cups mozzarella cheese 14 oz. ricotta cheese 16 oz. cottage cheese 1/2 cup parmesan cheese 1 round yellow "Patty Pan" squash sliced 2 medium tomatoes sliced Preparation: Sautee garlic and shallot in olive oil Add marinara and chopped tomatoes Heat on low for 30 minutes, add herbs then set aside to cool Mix ricotta and cottage cheese and dust with dry Italian herbs Boil noodles for 10 minutes, remove and rinse in cool water Layer 3 times: Noodles Ricotta and cotta cheese mixture Sauce Tomato and squash slices Mozzarella Cheese Parmesan Cheese Bake for 45 minutes in 325 degree oven covered for 20 minutes and 25 minutes uncovered Garnish with dried herbs and real parmesan

How to make Vegetable LasagnaMay 09, 2012 Whether you are vegetarian or not, you're going to love this recipe. It's nutritious, delicious and so easy to make. It's one of those recipes that is quick and easy to prepare a day in advance, store in the fridge and then pop in the oven the next day for lunch or supper. The leftovers freeze great as well...just cut into squares of desired size and store in containers in the freezer, ready to pop in your lunch box for work. The other great thing about this lasagna, is that it tastes great hot or cold which can be handy if there is a long line up at the microwave at work.

Cooking with Bessemer - Vegetable LasagneMay 23, 2012 In this episode of Cooking with Bessemer, we show you how to cook a great vegetable lasagne. 34cm Baking Dish & Lid & 5.0ltr Casserole & Lid Angelina Gualdi Crepes 3 Eggs pinch salt 2 generous cups plain flour 1 ½ cups milk 1 ½ cups water Mix all ingredients together in mixing bowl Stand one hour before using Heat 34cm Baking dish base to medium Place 1 ladle of mixture in base roll around to cover base Turn over and cook other side Makes 3-4 large crepes Tomato Sauce 1 onion chopped 2 tablespoons oil ½ cup water 2 medium zucchini 2 carrots 200 gm button mushrooms 1 medium eggplant cubed 1 425gm can peeled tomatoes 3 tablespoons tomato paste 2 chicken stock cubes salt & pepper to taste Place onion and oil in 5.0ltr casserole base saute gently Add peeled tomatoes and paste—simmer for a few minute Add vegetables, stock cubes, salt & pepper Simmer on low for 35 minutes Ingredients for Lasagne 2 cups grated mozzarella 1 cup grated parmesan cheese 2 eggs ½ cup thickened cream ½ frozen spinach defrosted Beat eggs and cream together Line bottom of 34cm base with the tomato sauce Place layer of crepe and cover with sauce, spinach and mozzarella and parmesan cheese spoon small amounts of the eggs and cream mixture over layers Repeat 2 more layers Place cheese and egg mixture on top layer Cook on medium heat for 10 minutes---- with lid vent open Reduce heat to low and simmer for 40 minutes When cooked let stand for 5-10 minutes before serving Serve with a sprinkle of parmesan ...

MJH Cooking: Fabulous Vegetarian LasagnaMay 04, 2012 How to make Ultimate Ricotta & Mascarpone Veggie Lasagna with quorn mince. This simple, healthy and easy to follow vegetarian Lasagna recipe is packed full of vegetables and the final result is sure to impress your family and friends! Ingredients: 1 tub Mascarpone 1 Tub Ricotta 10 Good quality Lasagna Sheets 3 Peppers 2 Courgettes 1 bag Veggie Mince 1 jar Tomato Sauce Oil Bring a pan of water to the boil and place a lasagna sheet in one at a time allowing ten seconds between each noodle and add a splash of olive oil. See packet for cooking time guidelines. Heat some oil in a griddle pan, slice the peppers and courgettes and add them to the pan. Leave to griddle and turn occasionally. In another pan, heat some oil. Break up the veggie mince and heat for 5 - 10 minutes. Meanwhile, when your lasagne sheets are ready, drain and rinse them with cold water and set aside. Combine together the mascarpone and Riccotta cheese in a bowl. And separately, grate the Cheddar. In a large greased casserole dish, lay down the first layer of lasgane sheets. Add a layer of the mascarpone and ricotta mixture and the tomato sauce. Add another layer of lasagne sheets and continue with the vegetables, mince, tomato suace and cheeses as you like. there's no correct way of doing this, it's completely your preference! Prepare "cheese" (I used Follow Your Heart Vegan Gourmet cheese alternative mozerella and cheddar flavors) by using 5oz of the mozerella flavor, mixing with 2 tbsp soy milk to make a "ricotta" mixture and grating 5oz of the mozerella flavor and 5oz of the cheddar flavor. 2. Cook vegetables (I used cauliflower, broccoli, carrots, zucchini, and squash) 3. Cook lasagna noodles (I used Tinkyada Pasta Joy lasagne with rice bran, but I don't necessarily recommend this brand) 4. Cook "meat" (I used Smart Ground and cooked it with garlic, chili oil, and spike seasoning) 5. Cover bottom of lasagna pan with sauce (make sure the sauce you're using is vegan. I used Naturally Preferred brand organic roasted garlic) 6. Add a layer of noodles (Usually about three noodles makes a layer.) 7. Add a layer of vegetables 8. Add a layer of "meat" 9. Add a layer of "ricotta" mixture 10. Add a layer of "cheddar" and "mozerella" cheeses 11. Add a layer of sauce 12. Add a layer of noodles 13. Add a layer of vegetables 14. Add a layer of "meat" 15.
